Easy mushroom curry recipe

Mushrooms are pretty simple to cook, and are low on calorie, fat and cholesterol. Often touted as a “powerhouse of nutrition” white mushrooms are rich in minerals, vitamin D and antioxidants, making them a must-have for multiple health benefits.

While you can use mushrooms in a soup or a salad, a very easy way to incorporate it in your regular diet is to make a curry to go with rice or roti.

Here’s an easy to make recipe with readily available ingredients in your kitchen. Do try this recipe and share your views.

Ingredients

  • White mushrooms 200gm
  • Sliced capsicum 1small
  • Green peas 1/2 cup
  • Chopped garlic 2 large cloves
  • Chopped green onions 2 tsbp
  • Chopped tomatoes 5 medium
  • Turmeric powder 1tsp
  • Coriander powder 2 tsp
  • Cumin powder 1tsp
  • Garam masala powder 1 tsp
  • Salt and pepper to taste

Method

Heat oil in a kadhai/wok and stir fry the mushrooms until they leave water. Keep stirring until the water starts to dry up. Keep aside.
In a kadhai heat oil, and add the chopped garlic.
After a minute add the tomatoes and stir. Add 2 tbsp salt.
Add 3/4 of the green onions and stir for 2 minutes. Then turn off the heat and let it cool for 10-15 minutes.
Transfer the cooked tomatoes in a grinder and make a paste.
Then add the past to the kadhai with 1 tsp oil.
To this mixture add turmeric powder, coriander powder, cumin powder and crushed black pepper and mix well.
Then add capsicum and green peas and mix them well.
Add about 1/2 water and let it simmer. Add more salt of needed.
Add the stir fried mushrooms, cover it with a lid and let cook for a few minutes.
Add 1 tsp garam masala to the curry and stir.
Serve it hot with rice and enjoy your healthy and tasty meal with a smile.
