Millennials staying away from home would definitely relate to how difficult it is to compromise with food, especially if you are a picky eater. Bongs across the world are undoubtedly foodies. If not a verified gourmet, a Bong tongue, in general, craves for taste and flavour.
Kolkata is synonymous to several words like nostalgia, culture, literature, chai, good food and street food. So, other than missing home-cooked food Kolkatans residing away form the city also miss the city’s cherished street food. Egg lovers would drooling at the mere mention of a lip-smacking egg roll.
Here’s how you can prepare a filling egg roll for yourself.
Ingredients:
Eggs (beaten): 1-2
Maida / Atta: 1 cup
Vegetable oil: 2 tbsp
Salt: 2 tsp
Coriander leaves: 1 tbsp chopped
Onions chopped: 1tbsp
Cucumber chopped: 1tbsp
Method:
Mix the maida or atta (just a healthier option) with salt and a little oil, then prepare a dough adding water. Roll out a paratha and roast either side slightly. Add oil to the pan and make the paratha. Once it’s golden brown, remove the paratha from the pan. Heat a little more oil and add the beaten eggs, sprinkle salt and pepper and press the paratha onto the omelette in the making, and cover the pan with a lid for about 5 seconds.
(You do not need to coat both the side with eggs)
Remove the paratha from the pan, and lay it on a clean paper on the kitchen table, egg-coated side on top. To this add chopped, onions, cucumbers, fried potatoes (optional, I added them to make it more filling), tomato ketchup and chili sauce/ chopped green chilies. All the ingredients topped on the paratha should be placed upon one another lining one side of the paratha. Now, take the paper and roll the paratha. It should look like the photo attacked!
